Best Stuffed Bell Peppers Recipe

These cheese-topped stuffed bell peppers are packed with ground meat, tomato sauce, and rice then cooked to perfection. A traditional comfort food masterpiece!  

– 6 bell peppers any color, or a combination of color – 2 teaspoons olive oil – 1 1/2 pounds ground beef I use 90% lean – 1/2 cup onion finely chopped – 2 teaspoons garlic minced – 1 1/2 cups cooked white rice do not use raw rice – salt and pepper to taste – 15 ounce can tomato sauce – 1/2 teaspoon Italian seasoning – 1 1/2 cups mozzarella cheese shredded, divided use – 2 tablespoons parsley chopped – cooking spray


Heat a 350-degree oven. Use cooking spray on a large baking dish. Slice and remove the ribs and seeds from pepper tops.  


Step 1

Place peppers cut-side down in baking dish. Add 1 1/2 cups water to dish. Bake 25 minutes foil-wrapped.  

Step 2

Make filling while peppers simmer. Heat olive oil in a large pan on medium. Season ground beef with pepper and salt.  

Step 3

Use a spatula to break up meat and cook for 5-6 minutes. To soften the onion, cook it for 3–4 minutes. Add garlic and cook 30 seconds.  

Step 4

Add tomato sauce, rice, and Italian seasoning. Mix well. Season 1/2 cup cheese with salt and pepper.  

Step 5

Drain peppers after baking. Flip peppers and stuff with beef. Top each pepper with remaining cheese. Cover and bake 20 minutes.  

Step 6

For 10 minutes, bake cheese until melted and browned and peppers tender. Sprinkle parsley, serve.
