The Best Chicken Caprese Recipe

This chicken caprese recipe features grilled seasoned chicken, fresh mozzarella, ripe tomatoes, basil, and balsamic reduction. Quick and easy meal for a busy weekday but special enough for guests!  

– 1 lb boneless skinless chicken breast – 1 tablespoon olive oil – salt and pepper to taste – 1 teaspoon dry italian seasoning (or equal parts of garlic powder dried oregano and dried basil) – 4 thick slices of ripe tomato – 4 1- ounce slices of fresh mozzarella cheese – 2 tablespoons balsamic glaze or balsamic reduction – 2 tablespoons thinly sliced basil


Place a grill or grill pan over medium-high heat. Sprinkle salt and pepper on chicken breasts and drizzle 1 tablespoon of olive oil.  


Step 1

Season chicken with Italian seasoning. Grill chicken for 3-5 minutes per side until done.  

Step 2

Cooking time depends on chicken breast thickness. Add mozzarella cheese and heat for 1 minute after chicken is done.  

Step 3

Place chicken breasts on a plate after cooking. Add one tomato slice, thinly cut basil, and salt & pepper to each breast. Serve with balsamic glaze.
